Controversies you didn't know existed: 1) Chilli con carne
|
Is it Mexican or Texan (I thought it was Mexican - there's also the weird alternative that a Spanish nun evangelised the New World with Catholicism and chilli, in spirit, without leaving her Spanish nunnery)?
Should it have tomatoes in it (I thought: yes)?
What meat should it have (I thought beef, but apparently venison or beef + pork are alternatives)?
Should it have beans in it (I thought kidney beans were essential)?

Chipotle chillies - worth the effort of hunting them down?

It is good (the chocolate)
Poor or lazy man's mole.
Remember chocolate and chilli was thing long before chocolate and sugar was.

Dark chocolate really does work but not too much and with a lot of chilli heat. I add a big slug of whisky too - yum

Correct and bolognese is not just any meat/tomato sauce.
Sorry, if I killed anyone on WHO. From dry is probably a misnomer and I just meant not canned. You soak them overnight of course and boll them in part of your mixture and then add other things for the simmer that can toughen, like actual meat, not mince. (Though you can and should brown the meat firs then take it out, before you add the liquid and beans for the boil.)
The toxic is killed, not washed away, so you can boil it in whatever and then eat it.
But again, none of that is remotely Texan or authentically "chilli con carne."

Always boil my kidney beans 20 mins.
Don't know if I'll save ten minutes and risk dying in agony after today...

I worked once with a Texan in Amsterdam.
His claim to manhood and maturity was how hot he could eat (and enjoy) a chilli and/or chilli sauce.
He was a complete wanker.
And a loud-mouthed smelly fat fucker.

I put chocolate in my chilli.
Texans never put any beans in their chilli ever.

Zeb the ones in cans are pre-soaked. I cant put them in mine my daughter doesn't like them. I got recommended to make a chilli with chocolate in once. It wasn't good, and yes I used plain dark not a Toblerone..

A chilli con carne is no good whatsoever unless the onions are chopped to a decent size and have a crunch to them.

It is not the soaking (that is for rehydration) that denatures the toxins but you do have to boil them for ten minutes to do that. Then just simmer them until they are cooked

Texans will get upset if you put beans in chilli (It is definitely not Mexican) but I think they are okay as long as you cook them from dry in a least a portion of your mixture. If you just add them from a can they are mealy and tasteless.
